on my to-cook list

I have had a lazy day.
I would usually show you something that I have cooked or baked on a Sunday afternoon, but I have cooked at funny daylight-photography-prohibiting hours this whole week, and I went out for brunch and then napped all afternoon today (I’ll pay for that with a vengeful bout of insomnia later).
But that’s what Sundays are for, though, right?
I can only show you two things that I plan to make.
Chickpea ‘Blondies’ by Have Cake Will Travel
Salt + Vinegar Kale Chips by Foodess
I picked up a bunch of organic green kale at the new store I told you about yesterday. There was a purple variety, too! It’s the first time ever that I have been able to procure kale in this here town, so I’m quite excited. (I know — who gets excited about vegetables? I do.)
The chickpea ‘blondies’ I have made before, albeit a couple of years ago now. I found the recipe very sweet with the addition of the fruit jam, so I am planning to up the nut butter and replace the sugar and jam with brown rice syrup and see what happens. Perhaps I will toss in some chopped chocolate. I love peanut butter and chocolate together. I’m hoping that this slice will turn out like a tree-hugging-hippie-crap version of a Reese’s cup. We’ll see.
Meanwhile, I remembered that I promised to share some footage of my cat Lucky doing his meerkat thing. If you head over to my Facebook page, you can see a little clip there that I filmed with my iPhone. Unfortunately, Oliver photobombed (you can’t hear me say, ‘Oliver, you have wrecked this!’ because I was holding the phone too far away from myself), but you get the general idea. Cuteness galore. Would you believe that he is 14 years old?
I hope that you’ve had an enjoyable weekend. I accidentally acquired a sunburnt cleavage this morning. I’m off to have a warm shower and to douse myself with herbal recovery gel.
Adios!

Please blog about the kale chips. Leafy greens abound in Alberta, and I’m always looking for new ideas. x
Now I wish that the kale I found was not $6.50 a bunch. I inhaled the entire batch of chips in five minutes flat.
You need to source a good Kale Dealer: that’s expensive.
Kale is the new crack.
